My hygge life

I feel very blessed to have the life that has been given to me. I wake up with thoughts of joy for the new day and gratitude for what is, continue my day with little reminders of it and every night I lay my had to sleep in gratitude for all that happened, the good and the bad and the happy and the sad. I must admit that the recent weather related events, political climate and thoughts about my children's safety at school (I know right! we should not be thinking such things!) are putting a little kink on my mood and overall disposition. I know that when I feel this way I have to visit my library and borrow as many books to get me moving in the right direction. It is no surprise to me or to our local librarians, who know me really well that I leave with lots of creative, inspirational and hygge books.

As I am enjoying reading my newest treasure, I ask my partner in crime who is lying next to me "what Scandinavian country would you like to move to? "Norway." I love when we share our ideas and allow ourselves to dream together. There is something very inviting about being in a place where the government takes care of the essentials, such as child care, education and health care. Both Jeffrey and I agree, it would be so worth of paying higher taxes and be worry and anxiety free because at the end of the day we pay much, much more for all these expensive necessities. Meanwhile we keep dreaming and drifting off to sleep to beautiful images.

My sense of gratitude reminds me of the beauty that is present in my life. Today, I am reminded of my cozy morning routine. I wake up to a quiet house. I feed our cat and make a delicious cup of coffee for myself while contemplating what lies ahead of me. I sit in the dark patiently awaiting my children sleepy little steps. As they are getting older, waking up shifts into me getting them out of bed. Lately, I have been noticing that when my morning routine is relaxed, cozy and happy, it reflects in how my day unfolds and in tender relationships with my family. Based on this observation, I have been making conscious effort to bring more hygge into my mornings.

There is no better way to begin the day then with a delicious homemade food. Today I am making what my kids call "A Bite of Deliciousness." These little puffs are really the most delicious doughnut holes, light and cakey. It is a recipe that I obtained from Food 52. I made a few changes to this recipe to make it a little bit healthier and also less time consuming. I think it takes me about 10-15 minutes to prepare, 15 minutes to bake in a mini muffin pan and a few seconds to consume. If you are making this in a regular muffin pan, bake for 20-25 minutes. Also, while this is in the oven, you have a perfect little time carved out for taking a shower.


1 1/2 cup all purpose flour
1/2 cup sugar (I use a little bit less)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp allspice
1/8 tsp ground clove
1/8 tsp ground ginger
zest of one orange
1/2 cup whole milk
1/3 cup vegetable (sunflower oil)
1 lg egg
2 tsp Turbinado sugar for sprinkling
1 tsp cinnamon for dusting

1. Preheat oven to 355F.

2. Whisk together the dried ingredients; flour, baking powder, salt, nutmeg, allspice, ground clove, ground ginger, zest of orange. Combine milk, vegetable oil, an egg in a medium bowl and whisk together until smooth.

3. Grease the mini muffin pan and divide the batter evenly. Sprinkle each muffin with a little bit of corse Turbinado sugar and bake until toothpick inserted into the center comes out clean, about 15 minutes. Turn off the oven!

4. When done remove gently from a pan and dust lightly with cinnamon. Serve on a beautiful serving plate and enjoy while warm.
